A cake memory from the 2023 Taste of Chittering

INGREDIENTS

1 ¼ cups seeded dates

1 ¼ cups boiling water

1 teaspoon bicarbonate of soda

60 g butter, chopped

¾ cup firmly packed brown sugar

2 eggs

1 cup Self Raising flour

Combine dates and water in a pan, bring to boil, then immediately remove from heat.  Stir in soda; allow to stand for 5 minutes.  Blend or process the date mixture with butter and sugar until almost smooth; add eggs and flour, blend or process until just combined.  Pour the mixture into a prepared pan lined with baking paper or well-oiled so it doesn’t stick to the pan.

Bake in a moderate oven at 160 degrees for approximately 55 minutes or until cooked through.

Serve warm with butterscotch sauce and ice cream.  Yum!

 

BUTTERSCOTCH SAUCE

1 cup firmly packed brown sugar

300 ml cream

200 g butter

Combine ingredients in a non-stick saucepan and stir over low heat until sugar is dissolved.

Add butterscotch liqueur for extra taste if desired!
