Ingredients

  • 1 large bunch of Silverbeet (alternatively, use a combination of any of the green leafy veg. growing in the garden at the moment)
  • Juice of 1/2 lemon
  • 1 onion, chopped
  • 2 cloves garlic, chopped
  • 1/2 tsp mint, chopped
  • 3 TBS olive oil, plus more for drizzling
  • 1 cup chicken or vegetable stock
  • 1/2 cup rice (long grain or basmati)
  • Salt and pepper to taste

Method

In a large pot, wilt the spinach or greens with lemon juice and 1 TBS olive oil.

In another pot sauté the onion and garlic with the rest of the olive oil until golden Add the spinach, mint, and stock and bring to the boil.

Add the rice, salt, and pepper as required. Simmer covered for about 15 minutes (add additional stock or water as necessary).

Remove from heat and allow to sit for five minutes.

Serve with a squeeze of lemon and a drizzle of olive oil.
