Ingredients
- Olives – any type and size
- Water
- Salt
- Brown malt vinegar
- Olive oil
- Fresh rosemary sprigs
- Sliced fresh garlic
Method
Completely cover olives with water in a bucket or container and cover with a tea towel or lid. Change the water every day for about three weeks. Taste the olives until they are no longer bitter otherwise keep changing the water until they taste good.
When the olives are no longer bitter, add:
- brown malt vinegar to taste
- salt to taste
- a decent glug of olive oil
- rosemary sprigs
- garlic
Leave olives in this mix for about one week. Taste. Mine tasted great at this point.
Adjust the mix if need be according to taste eg if too salty, change the water do not add salt, add more or less vinegar according to taste.
Sterilize jars and lids by covering with water in a saucepan and bring water to boil. Once water has boiled, turn off heat; allow cooling slightly, turning jars upside down and draining off the water.
Then with a spoon fill the jars with the olives and some of the water, vinegar, salt, rosemary, oil and garlic mix and seal jars.
Store the jars in a suitable location/pantry etc and have some on hand ready for use anytime. Share with family and friends.
Olives are ready to enjoy, delicious.
