Every year I bake this Tropical Boiled Fruit Cake, ice it with the vanilla icing and decorate it with some ivy and red ribbon.
It is our centre-piece for morning tea the week before Christmas when my colleagues and I are working hard to finalise our students’ assessments. A good cup of tea and a delicious piece of fruit cake is just the best to get through some tough days leading up to Christmas.
I love to make this as it brings such amazing reactions from staff, the appreciation of home cooking, as the smell of the fruit makes us feel warm inside.
A winner every time. Again next year. Sharing the joy is a pleasure.
