Mini Workshop with Concetta Sultan as part of the Olive Festival 2023 Ever wondered how the Italians make their own pickled olives? Now’s your chance to find out in a fun interactive mini-workshop presented by Concetta Sultan, co-author of the Cugini in Cucina Cookbook. Have loads of fun while learning the ancient art of preparing and preserving traditional olive styles and flavours from scratch, the way our Sicilian ancestors would have done it. Concetta will teach you what you need to know to make a variety of olive styles, including how to find different olive varieties around Perth, when to pick them and how to preserve them into crisp olive pickles that last for years without any preservatives. What to expect on the day Bring along: An apron, a sterilised 500ml (approx) glass jar including the lid, a small cooking knife and a small chopping board. Processing and curing: While you process and cure your olives like a pro, you’ll gain a good understanding of various curing and processing styles you can easily follow at home. Enjoy the fruits of your labour: Sit back and taste some delicious Sicilian olives before heading off to enjoy what the rest of the Slow Olive Festival offers. In addition, take home your very own jar of olives you made during the workshop.
